For giants: type /summon Giant :)

For the skeleton horse, put "Type:4" instead of 3.

Okay, if you want them, here are the commands: zombiehorse: /summon EntityHorse ~0 ~0 ~0 {Type:3, Saddle:1, Tame:1} enter it in your CB ;)
